Sneaky Mac and Cheese

A year ago if you told me I’d be eating and making mac and cheese with no cheese- I would have called you crazy. Insane!

But I’ve realized that everyone’s favorite comfort food- can be healthy and still taste almost as good as the blue box’s.

Here’s my recipie for Vegan (yeah I said it) Mac and Cheeze:

vegan mac sauce
3/4 cups soy milk
1/2 cup vegetable oil
1/2 cup water
1.5 tablespoon DijonĀ  mustard
1/4 cup vegan cream cheese
1/4 cup soy sauce
6oz block firm tofu (try tiny greens farm at the green city market in chicago)
2 garlic cloves
1/2 tablespoon smoked paprika
1/2 tablespoon salt
1 teaspoon cayenne pepper
1/2 cups nutritional yeast

Pasta:

Any kind works- but to really health it up- try brown rice pasta

Then:

Blend everything together in blender until smooth
Pour over pasta, and heat in oven at 325 in oven proof pan until hot
or bring pasta and sauce to a simmer over stove in a pot
